June 10-12 2011: NYJ Camps, For our East Coast Friends!

NJY Camps has just completed a dedicated gluten-free kitchen for their summer program beginning June 2011.  We’ve had an exciting opportunity from NJY Camps in partnership with 92Y to experience their gluten-free camp program through a gluten-free family weekend, June 10-12, 2011.  This event will be limited to 200 families and will provide an exciting opportunity for friends of the Center to combine fundraising and socializing with a unique gluten-free camp experience.

Date:  June 10-12, 2011

Location:  NJY Camp, Milford PA

Registration:  $250 per person (all inclusive); kids are free!

1in133 Campaign: It’s A Big Deal! Help Us Celebrate!

 

Have you heard about 1 in 133?

1 in 133 is an organization that was started to help bring awareness to the long overdue need for FDA gluten free labeling standards.

From 1 in 133 website:

In 2007, the Food Allergen Labeling and Consumer Protection Act (FALCPA) tasked the Food and Drug Administration (FDA) to finalize standards for gluten-free labeling. Four years later, the FDA has failed to fulfill that mandate. To the millions of Americans who eat gluten-free food, this inaction is a big deal.

To draw attention to the FDA’s inaction, and to galvanize the burgeoning gluten-free community, leading members of this community will host Capitol Hill legislators, noted celiac disease researchers, gluten-free community leaders and food corporations to the first Gluten Free Food Labeling Summit, in Washington, D.C. on May 4th, 2011.”

On the 1 in 133 website there are several things you can do to help make a contribution:

You can donate money.
You can sign the petition.
You can write a letter to the FDA.
You can advertise the campaign on your social media sites.

Girls On The Run!

The Gluten Free RN officedecided to sponsor a local group of girls who are part of an organization called Girls On The Run. Girls On The Run is a non-profit prevention program that encourages preteen girls to develop self-respect and healthy lifestyles through running. Their curriculum addresses all aspects of girls’ development including their physical, emotional, mental, social, and spiritual well being.

In our local community, Girls on The Run is divided into different teams at elementary schools throughout Corvallis and Albany. The girls meet twice a week with their team, and at the end of the program they will run/walk a 5k with the whole community. At all these events the girls are given snacks. Many of these girls have food allergies and intolerances.

The Gluten Free RN office is sponsoring a local school that has four girls who are gluten intolerant. In order to help these girls have gluten free snacks the office set out on a mission to find safe and healthy snack options. Luckily, here at the office we found two companies that were more than willing to donate snacks.

Mary’s Gone Crackers, Food Should Taste Good and Bakery on Main all donated a generous amount of healthy, and gluten free options for the girls. Both companies donated enough snacks for not only our team, but for other girls in the program as well. The Gluten Free office will be visiting our team soon. Stay tuned for pictures!

Gluten Free Natural Disaster Supplies

If a natural disaster hits are you prepared to feed your gluten intolerant/celiac disease family?

It is not a matter of IF a major disaster will hit the west coast; it is a matter of WHEN. In situations of natural disasters the government will not be able to feed those who have food allergies. They are simply not prepared to feed the celiac and gluten intolerance community.

The Gluten Free RN has put a list of foods together that every person with gluten issues should have in their pantry in case of an emergency. This list does not include a specific quantity because every family is different, and everyone should stock according to their needs. Keep in mind that you should stock enough food for at least 72 hours. All the foods on this list are gluten free and dairy free. Additionally almost all of these options are nutrient dense and non-perishable.

Fruit, beans, tuna, chicken, and CF GF chili or soup

The Best GF Muffin Recipe!

Susan’s Gluten Free, Dairy Free Berry Muffins (With Egg Free Option)

This recipe is one of the best muffin recipes that we have ever encountered here at the Gluten Free RN office. Nadine makes these muffins on almost a weekly basis for her family, and she is always modifying the recipe to add creative, and new ideas. We suggest making your own substitutions, and additions to all recipes. Always have fun with your baking and be creative!

½ cup shortening, softened (I use 1 cube Earth Balance Buttery Sticks)
1 cup sugar
3 eggs*
1 teaspoon vanilla
2 cups Gluten Free Flour mix (the options here are endless, see bottom for ideas)***
1 teaspoon baking soda
1 teaspoon xanthan gum
1 teaspoon cinnamon
½ teaspoon salt
1 cup chopped nuts (optional) – Pecans, Almonds, Walnuts, Coconut
3 ripe bananas (The options here are also endless) – Berries, Chocolate, Ginger, ect.

Preheat oven to 375

Mix Shortening and sugar until light and fluffy. Add vanilla and mashed bananas (or other fruit) Add eggs or substitute mixture. Add dry ingredients and mix until well blended. Finally add pecans or other nuts.

Divide into 12 well-greased muffin tins. The dough will seem a little dry. Press with wet hands to spread.

Bake at 375 for 15 minute or until light brown and a knife inserted comes out clean.

Makes 12-18 depending on the size of the muffins.

*To make the vegan version, replace 3 large eggs with:

  • 4 tablespoons unsweetened applesauce
  • 2 teaspoons baking powder
  • 2 teaspoons gluten free egg replacer
  • 3 Tablespoons warm water

***Gluten Free Flour Ideas:

  • 1 ¼ cup brown rice flour, ½ cup potato starch, ¼ cup tapioca starch
  • Use a pre-made GF flour mix
  • Make your own creative flour mix – Nadine changes her flour blend quite often. She suggests using a mixture of different gluten free flours, and to always include a high protein option like Montina.
