Why should you want to know about gluten intolerance & celiac disease? For the very simple reason that you could have gluten intolerance and celiac disease and not know it!
What is gluten intolerance?
Gluten intolerance is the inability of your body to digest the proteins found in wheat, rye, barley and sometimes oats.
What is celiac disease?
Celiac disease occurs in genetically predisposed people of all ages and ethnic backgrounds. The proteins in wheat, rye, barley and sometimes oats cause an inflammatory auto-immune response that can and does affect every organ system in the body!
If left untreated, celiac disease can lead to lymphoma, bowel cancers and much, much more.
Currently, it is estimated that one out of one hundred Americans has celiac disease. That works out to be approximately 3 MILLION people! Of those, only 3% are diagnosed with celiac disease. My educated guess is that these numbers are MUCH higher than currently reported.
