Casein is the protein found in dairy. It is similar to gluten and has been found to cause an adverse reaction in those who already have villous damage. Therefore, we recommend eliminating dairy from your diet for at least the first six weeks. The good news is that in many, once the gut has healed, casein can be reintroduced slowly.
So, six weeks on a gluten/casein free diet. The next step is a gluten challenge. A gluten challenge means eating something that contains gluten in order to see whether it causes an adverse reaction. This can be anything from gastrointestinal issues, arthritis, migraines, dermatitis, etc. The possibilities cover a wide range, but what is certain is that you WILL KNOW.
